I've got a quart jar of the super spicy, but tingly-fragrant chili "crisp" leftover from when I made the Mission Chinese mapo tofu. On mornings when I need a ?kick? I'll put a fried egg over fresh rice, then sauté a sliced scallion in butter with a little spoonful of the crisp and a splash of soy sauce and drizzle it over the everything.

It's the solids leftover from making a big pot of chili oil. Danny bowien's recipe is a bit of a complicated one--tons of chilies, Sichuan peppercorns, ginger, garlic, fermented black beans, fried onions, mushroom powder, and more--but super worth it (& you'd probably only have to make it once to get enough chili crisp to last a lifetime). It's in the Mission Chinese Food Cookbook
