Heat a little olive oil and smashed garlic in a pan. When garlic is fragrant, add some pureed tomatoes, cook for a few minutes, add eggs, stir them in the sauce until almost cooked, fold in rocket. Season with sea salt, freshly ground black pepper and hot sauce to taste. Serve with toasted and diced sourdough bread and a good drizzle of extra virgin olive oil.
