What's the key to a good kale salad - or any hearty salad green for that matter - 1) dress it proper 2) add lots of nuts and cheese. I always start by thoroughly washing my kale, removing the stems and slicing it into thin strips (julienne the way you would with basil). This makes the heart my leaves easier to eat. Then dress with a lemony vinaigrette - the acid and oils will soften the leaves. The most important part is to throughly dress the salad, toss to excess, and let it hang for a few. Then toss in some cheese and nuts. This number is complete with sunflower seeds, aged cheddar, and roasted squash. I die. #notcontest
