Pasta Brunch | When you have a perfectly blooming basil plant on your window sill but only pancetta and eggs in your fridge. Thinly slice pancetta (smoked) and cook off in a skillet. Boil and cook your spaghetti with salt and olive oil. Create a poaching pot for your egg. Grate some Parmesan and set aside. Roll a few basil leaves into a cigar and thinly slice into ribbons, then set aside. Poach your egg, then drain noodles reserving some of that gorgeous pasta water. Add some butter, a handful of the Parmesan cheese, salt and pepper, basil, and the pancetta, and toss together. Move quickly to get that perfectly poached egg just right. ? Serve with the poached egg on top.
