15-minute Walnut-Garlic Pasta
Cook pasta in salted water until al-dente. In the last minute or two of cooking, toss in a handful of your favorite greens to wilt.
In the meantime, combine a handful of walnuts (or your favorite nut, about a third cup), a clove or two of garlic (raw, if you use roasted garlic, double the amount), and about a teaspoon of Italian seasoning or herbs de Provence in a food processor. Blitz until the nuts are in pea-sized crumbles.
Toss the walnut pesto with the pasta and greens, dressing with olive oil, some lemon zest and juice, and salt and pepper as needed.
More options: You can also add chicken, chickpeas, or another protein if you have any sitting around. Slivered basil is also a good addition. Or top with a fried egg. It's your party!
