It is a mexican breakfast inspired by one of the most traditional restaurants in Mexico City called Nicos. These are two corn tortillas with one or two sunny side up eggs in the middle, the salsa is done with tomato, serrano chile, onion, garlic and epazote a traditional mexican herb. Finally it is garnished with cotija cheese, more epazote, and black beans.
