I think my photo skills do not give justice to this bright pop of summer in the winter!
Take a few handfuls of cherry tomatoes and half them. Chop a shallot or two, depending on the size of the shallots and how much garlicky-oniony taste you like. Mix the halved cherry tomatoes and shallots with olive oil, salt, and pepper. Roast at 400 degrees F on a sheet pan for 10-15 minutes. Meanwhile, toast a slice of bread, then spread on some fresh ricotta. Once the tomatoes are roasted, slightly mash them and spread on top of the ricotta toast. Add chopped basil or Italian parsley if on hand, and enjoy!! #notcontest
