Chilli & Lime Rice Salad | Fry uncooked rice for a few minutes in olive oil, lime zest, a couple garlic cloves, and salt, then add water and cook rice. Add chopped (bite sized) greens - I used baby spinach, but any leafy greens will work - and chopped coriander to a large bowl. Add some slivered almonds. Sauté sliced peppers for a few minutes and let cool so as to not wilt the spinach. Fluff the rice and let cool a bit too. Then mix all together. Serve with chosen dressing - I made a quick vinaigrette with chilli infused olive oil, lime juice, and honey - garnishing with a lime wedge and paprika. I have made this with black beans before, and it was delicious, though not pictured here.
