El Guactopus: pressure cook 2-3 small octopus (1-2lb) for 15-20 minutes. Meanwhile, make simple guacamole with lime, Serrano chile, cilantro. Toss with ground aji Amarillo, cumin, black pepper, grill till charred. Toast corn tortillas over same fire. Toss octopus with ponzu sauce and toasted sesame oil. Assemble tostada, adding hot sauce and additional cilantro to taste.
