In parts of Italy so much parsley is eaten it has entered idioms and sayings. So ... excitable children are "crazy like parsley." Dinner the other night was maple glazed carrots, three colors; new potatoes; butter and... a generous sprinkling of parsley.
Simply boil carrots & potatoes until tender, drain and cook with a fat tab of butter and a couple tablespoons maple syrup until a sticky glaze forms. Season with salt and garnish with parsley.
