I brine my chicken breasts for about an hour in salt water then season and bake for about 15 minutes at 425. Comes out perfect every time.
Carrots are just roasted with olive oil, salt, and pepper at 425ish until they're tender and browning.
For greens I just sautee some onion, then throw in a bunch of greens with some salt and pepper and cook them til they wilt then finish with a squeeze of lemon juice.
