roasted veggie frittata
i just beat eggs (I use 12 egg whites for 3 servings, but whole eggs work too) with salt, pepper, and whatever seasonings sound good (like garlic, etc) then add a bit of feta and whatever roasted veggies I've got lying around (good for leftovers!). i usually sautee some greens in a skillet then dump the egg mixture on top and cook on the stove a few minutes before I pop it in a 350F oven until the egg is set. taste great fresh and makes great leftovers for lunch or breakfast.
