A great way to use up mushrooms that have hung around the fridge too long. Sauté them with a combination of butter and olive oil; scoop in some garlic confit of you have it or grate on a clove or two. Stir in some dark greens and let them wilt along with generous gratings from the pepper mill and flaky salt. Pile all this onto some bread you fried in that same pan, top with a hard cheese that you like, then an egg.

Is garlic confit available at stores or do you prepare it at home?

I prepare it, by cooking garlic and thyme in a bath of olive oil in a low oven. Some speciality stores might have it, or you can used roasted garlic cloves too.
