Shave 1 zucchini into ribbons using a vegetable peeler. Toss with lemon juice and a pinch of salt to marinate for a minute. Add a few quartered kalamata olives, thinly sliced celery, roughly torn fresh basil leaves, olive oil, black pepper. Finish with crumbled feta, toasted almonds + pumpkin seeds.
