Pineapple fried rice with roasted shrimp
Rice - Sauté onion, carrots, asparagus, peas and zucchini in coconut oil until just tender, add cooked brown rice and chopped fresh pineapple, season with toasted sesame oil and salt sauce to taste, garnish with green onion.
Shrimp - 1 pound large peeled and deveined shrimp. Toss with olive oil and Tom Douglas seafood rub. Roast in the oven at 400.
