This is one of my recent baked egg experiments. I lightly greased a ramekin. I put about 4 tablespoons of homemade salsa (any salsa will do as long as it's chunky) in the bottom. I cracked an egg in it, then covered the top with a mix of white cheddar and Monterrey jack. I baked it at 400 degrees for about 11 minutes. I wanted the yolk runny but the white firm. Not pictured is the entire avocado I inhaled with this. Scallions would have been great, but I didn't have any on hand.
