Pour almond milk into a bowl, glass, or jar. Stir in a little bit of vanilla extract and granulated sugar to taste. Add chia seeds, about 1/4 of the amount of the almond milk, and stir until all the chia seeds are soaked. Place the container in the fridge overnight. Then before serving, top with granola, dried fruits, nuts, and even a drizzle of honey or agave.

So I always seem to do it wrong and end up with way more milk than chia seed and it never sets right! Any tips? What am I doing wrong? :( (thanks in advance)

For this particular recipe, I did 1 1/2 cup milk with 1/3 cup chia seed. I usually pour in the milk first then stir in the sugar before adding the chia. Stir to mix and soak the chia. Place the chia milk mixture in the fridge so that the chia will soak up the liquid. You'll want to leave it overnight, but after an hour or two, I'd give the chia a stir to make sure that the chia on top will also be incorporated. In general, the ratio I would use is 1 cup milk to 1/4 cup chia . I hope that helps!
