Beetroot & Dill Frittata | Chop and sauté 1 onion until soft and translucent. Add minced garlic to cook for a minute or two. Scramble 12-15 eggs with a splash of single cream, and season with salt and pepper. Slice the beets (I used prepared beetroot to expedite recipe). Add eggs to a lightly greased tart dish and disperse the beetroot slices all around. Drop dollops of cream cheese & sprinkles of dill, then bake in a 200c oven for 30 minutes. Serve with a fresh sprinkling of dill.
