Cavalo Nero, potato and caramelised onion galette inspired by Food 52's 'How to Make a Savory Galette Without a Recipe'
Here I've added some depth using by slowly pan frying fine potato slices in butter until brown and a good smear of hot English mustard over the pastry before its filled. All finishes with a generous amount of Parmesan.
Best results are achieved by cold pastry going into a hot oven so I popped the assembled galette into the fridge for 20 mins.
