Baked halloumi with radishes, fennel and lemon.

All in the pan together, turn in olive oil, season and rub a mixture of herbs into the halloumi - I used thyme, oregano and sage. Place in a preheated oven at 200c for 20mins and then finish off under the grill for a moment if you want a bit more colour on the cheese.

Serve with leafy greens and the wonderful warm dressing that the roasted lemons and olive oil have created in the bottom of the pan.
