Anything Vegetable Not-Curry! Saute chopped yellow onion and minced garlic in oil until fragrant. Add whatever fresh or frozen vegetables you have handy and cook until warmed. Add cumin, coriander, curry, chili, and turmeric powder to taste. Add can of garbanzo beans and can diced tomatoes. Add water / broth if needed and cream, coconut milk, or soy milk if desired. Stir until reduced. Serve with rice or naan and a little fresh chopped cilantro! Dinner in 30. #notcontest #notcurry #vegetarian #dinner #30minutemeal
