(easy) Raw Carrot Energy Bites
Throw a handful of dried apricots, dash of vanilla, honey, and some applesauce in your food processor. Blend until relatively uniform.
Add a cup or so of shredded carrots and oats, a couple spoonfuls of almond flour, and a dash of cinnamon & nutmeg.
Blend in food processor until all combined and sticky! Scoop out into small balls and coat in shredded coconut.
Store in fridge or freezer for some lasting, vitamin packed energy!
