Slice a large handful of Brussels Sprouts of various thickness
Generous splash of olive oil in a cast iron skillet on medium-high...stir Sprouts until starts to brown nicely...some pieces will char and that is good
Add small handful of pumpkin seeds and continue to stir until they're toasted
Add a generous drizzle of maple syrup and let the sugar caramelize for a minute
Voila!

No, because they go in 30 seconds before the maple syrup, which is in for another 30 seconds or so. And you'll serve it right away so nothing is soggy. Enjoy!
