Eggs poached in yellow brandywine tomatoes, with kale and basil on toast.
No recipe needed, just fresh juicy tomatoes, fresh kale and basil. Sauté kale in a small amount of Evoo, once softened add basil, then
Tomatoes. Season with salt and pepper.
Simmer diced tomatoes add eggs and poach with tomato juices.
Make preferred toast and top with eggs and tomatoes.

We are very jealous that you have juicy ripe tomatoes already where you live!

This was what we enjoyed lunch but sadly not with delicious garden grown tomatoes! Store bought, less beautiful not as tasty! We are still covered in deep Snow and more on the way... Be jealous not, Seasonal food depression in full effect here in the north! But this is one of my favourite non recipes ☺️
