-Start by cooking your andouille sausages for about 10 min.
-Start grilling your peppers right before you think the sausages are done. Cook pepper till you get a nice char look. Get the char!!! Please believe me!!
-Take out the sausage and cut it up. The throw it in the pepper.
- crack an egg into each pepper.
The hardest part of this is to not over cook the egg. It took me twice to perfect it so the yolk would explode when eating.
- very important to have all your coals with a nice ember.
