Puree a can of chipotles in adobo (leftovers are great on sandwiches)
Purée some roasted red peppers
Mix shredded cooked chicken with puréed peppers
Top corn tortillas with shredded cheddar/Monterey jack
Add some roasted, cubed sweet potato, black beans and prepared chicken. Top with more cheese and another tortilla.
Cook in panini press, cool and cut into quarters.
Enjoy with salsa and guacamole! ?
