+ Roasted sweet potato & chickpea salad +

Cut 2 sweet potatoes in small cubes and roast in oven with olive oil, sea salt and pepper for 30 minutes. Meanwhile cut half an onion in brunoise and cook at low heat for some minutes, until brown and caramelized. Add 1 and a half cup of cooked chickpeas and stir for one minute. Combine with roasted sweet potatoes and season with cumin, ground ginger and lime zest. Drizzle with olive oil, sea salt and pepper. Serve with fresh cilantro. Enjoy (:
