Easy Oven Roasted Baba Ganoush
Preheat oven to broil with oven rack at highest setting.
Slice one eggplant 1/4 inch thick, salt and set in a colander in the sink to sweat.
After 10 minutes, rinse, pat dry and place on baking sheet and drizzle with olive oil and a little salt.
Broil for 10 minutes or so, flipping halfway through.
Remove from oven, cover and let rest for five minutes.
Grate or mince one clove garlic
Juice one lemon.
Peel skins off eggplant and add all ingredients plus a few tablespoons tahini to a food processor and blend till creamy. Drizzle a little olive oil in while it's going. Add salt and pepper to taste and any fresh herbs you want. Enjoy with veggies or toasted pita or by the spoonful. ?
