Preheat a cast iron skillet in the oven, and throw a tray of asparagus and grape tomatoes in there while you're at it. Coat the pork chop with olive oil, salt, and pepper. When the skillet is hot, put it on a burner, sear one side of the pork chop, flip it, and pop the skillet back in the oven until it's done to your liking. Sauté up some shallots and garlic while you wait.
