Preheat cast iron skillet in oven. Mix thyme with softened butter and push it under the skin of two chicken legs (drumstick plus thigh). Rub more butter plus salt and pepper on the outside. Put the skillet on a burner and sear chicken until skin is browned. Remove from pan, add in chopped sweet potatoes, pineapple, and some chicken broth. Put the chicken on top and pop it in the oven until cooked through.
