Make kale pesto: add 2-3 large kale leaves + 1 large garlic clove + 2-4 TBLS olive oil + salt and pepper to taste (optional to add pine nuts or walnuts, and squeeze of lemon juice) to a food processor or mortar and pestle - blend until combined. Toss pesto with 1 serving gluten free pasta, 1/2 cup roasted diced sweet potatoes, and sprinkle of red pepper flakes. #vegan #glutenfree
