Choose organic veggies. Sautée mirepoix in olive oil, add asst mushrooms, stir in at least one cup of cooked French lentils, salt and pepper to taste, large jar or more of good organic diced tomatoes, pinch each of thyme and oregano. Bring to a boil (careful not to burn the bottom) then simmer. While simmering, "spiralize" a few organic zucchini. Shred a small handful of fresh basil and stir in. Top raw "zoodles" with hot sauce. Top with Parmesan or cheese (or vegan cheese) of choice (optional- also drizzle some syrupy balsamic) and serve immediately!
