Sea bass ceviche with black eyed peas inspired by one I had in Havana, Cuba:
Soak and cook the black eyed peas. Soak the red onion in warm water for about 10mins. Finely chop the coriander (cilantro)
Mix the lime juice, juice of about half an orange and chilli.
Just before you're ready to eat, rub the fish with sea salt and then mix all the ingredients and let stand for 10mins before serving.
All the separate elements can be prepared before hand and then mixed at the last minute. You don't want to allow the fish to be over 'cooked' by the citrus or it will start to disintegrate.
Btw, the orange introduces a tiny bit of sweetness to cut through the shock of the lime. Some recipes add sugar instead but I think orange juice has the same effect and nicer taste.
