Roast a whole aubergine in the oven at 200C until it's completely soft all over (remember to pierce the skin), allow to cool so that you can handle it, then scrape out the soft flesh into a pan; add 2 chopped garlic cloves, 1 tsp ground cumin, 1 tsp paprika, 3-4 chopped medium tomatoes, salt to taste, lots of olive oil and lemon juice and cook it all together, mashing it all up as it all softens. Add 1/2 - 1 cup frozen peas and cook them through. Then add 1/2-1 cup arborio rice and start to cook it, adding water as needed to feed the rice.
