In a large saucepan, brown bacon, prosciutto, or sausage. Add vegetables and sauté using your judgement for best timing on individual vegetables.
When the vegetables are soft or al dente, add a splash (or more!) of heavy cream. Stir around. Add Parmesan cheese, manchego, or whatever strikes your fancy. Stir until melted.
Dump in drained pasta and stir to coat.
