Sweet Potatoes- peel and cut sweet potatoes and one sweet plantain in bite size pieces, cut half an onion in long pieces, cut half a red pepper in long pieces, cut up about 4 garlic cloves, combine all with a drizzle of EVOO and cover to simmer/steam (optional: season with pepper and garlic powder to taste). Once almost browned and cooked through, add 1 tbsp of low sodium teriyaki sauce for a little extra flavor.
Green beans- just a simple steam with EVOO drizzle and a little salt/pepper to taste.
Fried flounder- I rinsed the fish in cold water and set aside. Mix two eggs, half a lemon juice, pepper, garlic powder and 1 packet of azafran Goya (for color). Place fish in egg wash and prep your whole wheat bread crumbs on the side. Begin coating the fish with the bread crumbs and set aside. Heat large pan with preferred oil for frying and wait until hot. Now start adding fish and make sure heat is medium so it doesn't burn too much. Flip until fish is crispy and darkly golden :-). Place finished fish onto paper towel lined dish.
