Easy Whole Wheat Banana Blueberry Pancakes
1 cup milk (I used almond milk)
1 very ripe banana
1/4 tsp vanilla extract
1 cup whole wheat flour
2 tsp sugar
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp Cinnamon (optional)
1 pint blueberries
Mash ripe banana in a bowl with a fork. Add milk, egg and vanilla extract and whisk until combined. Set aside.
In separate bowl, whisk together whole wheat flour, sugar, baking powder, baking soda, salt and cinnamon if desired.
While whisking, add dry ingredients little by little to the wet ingredients and mix until combined.
Put a well greased pan or griddle over medium heat. Once warm scoop about a 1/8 cup of batter into griddle. While still uncooked, sprinkle about 5 or 6 (or however many you want) blueberries onto pancakes.
Let the pancakes cook until bubbles start to rise and open at the top of the cake. Flip once and remove from heat once cooked all the way through (about 5 minutes total).
Continue until you've used all of the batter. Serve with your favorite pancake toppings! I like real, grade A maple syrup ?
