Strawberry Lemon Thyme Scones. I use this master recipe, and add fruit, zest, herbs as desired when I'm making scones.

280 grams all purpose flour
75 grams sugar
15 grams baking powder
1 gram salt
84 grams cold butter, cut into pieces
125 ml buttermilk
1 egg

For this batch I added:
1 pint strawberries, hulled & chopped
Freshly grated zest of 1 lemon
Few sprigs of fresh lemon thyme, chopped

Whisk flour, sugar, baking powder, and salt in a bowl. If using any zest and herbs, this is the time to add it, too.
Scatter butter on top, and smoosh into the flour mixture until it forms a sandy texture with some chunks of butter. If using fruit, stir that in with a fork.
Beat the egg and buttermilk in a bowl.
Pour over butter-flour mix. Stir with a fork to form a rough dough. Scrape onto floured board. Divide dough in half, knead once or twice & shape into 1/2 thick circles. Cut each round into 6 triangles.
Bake in 425F/220C oven 12 to 14 minutes, until golden on bottom.
