Frittata with leftover veggies. Cherry tomatoes, asparagus, mushrooms, red onion in this one. Sauté mushrooms and onion in butter until soft. Add a mixture of 7 eggs plus 1/2 c milk or cream. Add the rest of the ingredients and cook until the edges set. Place in a 400 F oven for 5 minutes until eggs are completely set and golden brown on top.
