This is a totally non-authentic, cheater version of chilaquiles. I started by sautéing half a red onion in some olive oil. After a few minutes, I added the last of the crumblies from a bag of blue corn tortilla chips. I let them sit and cook for a few minutes, then added half a can of enchilada sauce to the mix. It thickened nicely because of the chips. I served it under a fried egg with sharp cheddar and cilantro.
Honestly, I like this non-recipe better when I use chunky home made salsa instead of canned enchilada sauce, but it's errand running day and supplies are low. :) I've also done this with leftover nachos and leftover cheese enchiladas- even more cheesy awesomeness! #norecipe #cheaterfood #breakfast #notarecipe #pantrycooking
