Pork Meatball in a Lemongrass Coconut Curry. Add finely minced ginger and garlic, scallions,cilantro, mint, sambal olek, breadcrumbs and seasonings to pork. Form into small balls and fry. Use pan drippings to start curry. Throw in more garlic, galangal, lots of lemongrass, kaffir lime leaves and chile garlic paste. Add coconut milk and chicken stock. Boil. Add pork and simmer 20 minutes. Garnish with cilantro and eat with rice or noodles.
