CHIA PUDDING PARFAIT WITH BERRIES???
1 can coconut milk (or any homemade coconut/soy/nut milk)
2 tablespoons pure maple syrup
3 tablespoons chia (or Skinny B cereal by Holy Crap)
1 tablespoon granola clusters
Cashew-Almond yogurt (or any soy/nut/coconut yogurt you wish)
Blueberries, raspberries & strawberries (or any fruit) for layering
Shake the can of coconut before opening. Mix the chia with the coconut milk & maple syrup and allow to sit, soaking, covered in refrigerator overnight. You can keep the chia prepared and stored like this and scoop out what you need until finished, for up to a week but I doubt it'd last that long! Layer chia pudding with alternating berries & granola clusters...topping the whole thing with more berries. Enjoy
