The Ultimate Pantry Meal: Smoky Bean & Corn Chili. Ready in less than 20 minutes, and always a winner with my kids. Sometimes we over complicate food, and forget that canned and frozen goods make great meals, too. I especially love this with my home-canned salsa, but your favorite supermarket brand is A-okay! Here's how this one goes:
Can of black beans, rinsed
Jar of salsa
1 cup frozen corn
Throw it all in a pot. Bring to a boil, then reduce heat to a simmer, and cook for 15 minutes. Serve with tortilla chips & freshly grated cheddar cheese. Serves 4.
