Simple Sautéed Mushrooms—after all it's almost morel season! Here I use a mix of exotic and button mushrooms. I never wash mushrooms but I do clean them with a paper towel by wiping off any debris. I never sauté wet mushrooms. I want them to absorb butter not exude water. If they are wet I put them into a salad spinner and slip them into the fridge uncovered. I let the auto defrost dry them out, sometimes as much as 24 hours. I always sauté them in butter with a very hot sauté pan. Season them right off with salt and pepper. I want to brown the edges of the mushrooms. Towards the end of cooking I add lots of minced garlic and more butter if the mushrooms have mopped it all up. I finish them with a heavy handed helping of minced parsley and thyme. #mushrooms #sides #dinner #norecipe
