For leftover pasta that's lost its oomph—sauté garlic, some greens (I used kale), and a whole bunch of onion in some olive oil with salt and pepper. Whisk together a couple of eggs, some milk, and Parmesan cheese. Add the greens and onions, along with a cup or so of leftover pasta (really anything, but I used tuna escabeche pasta). Take a small skillet and do whatever you do in the name of nonstickiness (for me that means more olive oil), then cook the eggs until you can see the bottom turning golden brown. Flip onto a large plate, and repeat on the other side. Revel in the satisfaction of bringing new life to leftovers. #notcontest
