Easy chilaquiles! Sauté leftover pancetta and black beans with a little homemade taco seasoning, soft scramble one egg, put tortilla chips in a skillet and cover with salsa (I used the chipotle roasted tomato from papalote in SF), let the chips cook for a few minutes, add shredded cheddar cheese, top with the pancetta and black bean mixture and the eggs and a dollop of Greek yogurt. Enjoy!
