Ham, pomme rösti, and asparagus!
Ham is glazed with the following in equal parts:
- apricot preserves
- rice wine vinegar
- mustard seeds
Reduced into a nice jelly type thing.
- 1/8" thick potatoes, sliced into 1/4" strips, and rinsed of excess starch.
- 1 stick of butter, melted
Toss ingredients in a bowl and empty into a pan. Fry for 5 minutes, then throw into the oven for 30 min or until crispy
Heat some olive oil in a pan and add some tarragon. Add asparagus and a half cup of water. Cover and cook for 10 min or so. Add salt and pepper to taste.
