Heat cast iron over medium with a bit of duck fat, add a diced onion and cook for a couple minutes. Add 1 roughly diced gold potato and stir to coat in fat, season with salt and pepper and red pepper flake. Let cook, undisturbed until bottom of potato is golden brown. Continue cooking, stirring occasionally, until potato is pretty much done. Add a bit of julienned kale, then cook a couple eggs right in the pan. Add parsley and a spritz of lemon and and eat with hot sauce, toast, and a bit of avocado.
