Mix together sliced onions, fennel, Dijon mustard, a little brown sugar, thinly sliced clementines, orange juice, lemon juice, olive oil, fresh thyme, and one cut up chicken, let marinate a few hours or overnight. Roast for 35-45 at 475 degrees. Reduce pan juices if desired and pour over chicken. Sprinkle with fresh parsley.
