Best scallops ever. In a screaming-hot pan with enough #meltedbutter to swirl, sear #scallops until caramelized. Turn to second side and cook, basting in the butter, for 3 or so minutes more. You may set off the smoke dectector, but that's what it takes to get a good sear.

Toss cooked rice with a handful each of fresh #dill and #cilantro, finely chopped. Add a little vinegar of your choice and combine. Seared or pickled mushrooms makes a great garnish - this mushroom "#escabeche" has lime & orange juices, garlic, pepper flakes, shallots, and kosher salt & evoo. You're over cooking them. When you flip them on the hot pan and remove from heat they still get a little colour on the second side and that's all you need to do! My boyfriend is a world renowned chef and he taught me. So, figured I would pass along.

I bet he is great - where does he cook? Lucky you! My scallops are still tender on the inside, and I don't keep them in the pan but for a minute on side two.

You're not supposed to sear the second side! You flip them but remove from heat and plate the rest and then your scallops.

Why not? I've seen great chefs sear side 2 and baste them to finish. Resting def makes sense!
